making bagels is a multi day process, and now you can see exactly how we do it!
here is Bagel Bob reviewing his orders and using some heavy math skills to determine how many batches, how many sheet pans, how many bagels...this evening we cranked out 350 bagels in just under 3 hours. manually.

getting the barley malt all nice and pliable

first three batches coming out of the big mixer

Julie & I's station for cutting, weighing, resting and rolling

this is what 18 batches of bagels look like before the addition of starter, water & malt

Julie and I cut, and hope for a direct 3.7 ounce hit, Bob tucks them into a ball to rest for 15 minutes before we hand roll them

Julie gets it right on the dot

Jason stops in for a pint and a visit to watch the magic

once rolled, the bagels get covered and rest in the walk in cooler for roughly 24 - 36 hours to retard

all done & clean up before KEXP'S Roadhouse program is over

rest up sweet bagels
