bagel baking part II

now that the bagels have "retarded" for 24 hours, it's time to boil, top & bake them.
this is a speedy process that requires ample room, quickness and lots of shuffling about. Here is Maria on her very first Bagel shift learning how to boil them up.

Bagel-Bot Julie stands firm at her station for distribution of toppings as soon as the bagels coming out of their boil bath.

Bagel-Bots working in unison is a wonderful thing

switching stations

as the third Bot, i got to manage the trays = pulling them out of the walk in, prepping them for Julie, taking them from Maria, baking, rotating, baking, removing. The repetition in Bagel making is what coined the term "Bots" as we really are just bagel making robots.

Aaron Stark of Brassica chimes in to tell me how Morrissey really did have a girlfriend in a coma before he decided to become a celeb it gay guy who then became asexual. reaaaaaaallllllllyyyyyy.

finding surface area in a small bakery for 350+ bagels to cool is interesting.

oops! how did she get here?

bob then writes the names of all his deliveries on the infamous brown bags and into the tubs they go!
Midori Farm looks like the next 500 level contender. Customers who surpass 500 bagels win breakfast made by bob including: My Pecan Sausage, The Local (cape cleare smoked salmon & fromage blanc), and Little Egg Sandwiches.

til next week - happy bageling.

bagel magic begins on wednesdays

making bagels is a multi day process, and now you can see exactly how we do it!
here is Bagel Bob reviewing his orders and using some heavy math skills to determine how many batches, how many sheet pans, how many bagels...this evening we cranked out 350 bagels in just under 3 hours. manually.

Julie & I's station for cutting, weighing, resting and rolling
this is what 18 batches of bagels look like before the addition of starter, water & malt
Julie and I cut, and hope for a direct 3.7 ounce hit, Bob tucks them into a ball to rest for 15 minutes before we hand roll them
Julie gets it right on the dot

Jason stops in for a pint and a visit to watch the magic

once rolled, the bagels get covered and rest in the walk in cooler for roughly 24 - 36 hours to retard

all done & clean up before KEXP'S Roadhouse program is over

Jonah, the two teether chin gobbler.

this was not my idea.

Jonah enjoyed an adult potluck/games party while being just 4 days away from his 6 month birthday. He stayed up way late & loved it. He also loves drawstrings on hoodies, biting chins with his 2 bottom nubbin' teeth, puppies and parties!
