bagel baking part II


now that the bagels have "retarded" for 24 hours, it's time to boil, top & bake them.
this is a speedy process that requires ample room, quickness and lots of shuffling about. Here is Maria on her very first Bagel shift learning how to boil them up.

as the third Bot, i got to manage the trays = pulling them out of the walk in, prepping them for Julie, taking them from Maria, baking, rotating, baking, removing. The repetition in Bagel making is what coined the term "Bots" as we really are just bagel making robots.

bob then writes the names of all his deliveries on the infamous brown bags and into the tubs they go!
Midori Farm looks like the next 500 level contender. Customers who surpass 500 bagels win breakfast made by bob including: My Pecan Sausage, The Local (cape cleare smoked salmon & fromage blanc), and Little Egg Sandwiches.
